As sad as it is, grilling season is almost over and pumpkin spice is upon us whether we like it or not. But don’t let that stop you from making some of the best fall recipes. Embrace the new season of tastes and fill up on delicious dishes, from appetizers to desserts. What better way to warm up on a day of Sunday afternoon football then with delicious rice balls? The fried snack is easier to make than you might think. Cook rice while combining pine nuts, shredded mozzarella, fontina cheese and parsley. After shaping the rice into 1 inch balls, insert the cheese mixture. Then, bread the rice balls and fry them. It’s that simple!

Shrimp Puffs

This easy recipe is the perfect cure for a hungry stomach. Create your own shrimp biscuits in a few simple steps. First, coat cooking spray on a miniature muffin tin, and with refrigerated biscuits, cut each in half and line in each muffin tin cup. In a bowl, mix shrimp, mayonnaise, dill, scallion and cheese. Insert the mixture into the biscuits and pop into the oven at 350 degrees F for 20 minutes.

Chicken with Arugula Pesto

Make a weekday dinner fun with chicken topped with arugula pesto and an orecchiette and green bean side.  Begin by cooking the pasta and green beans and toss with parmesan cheese, olive oil, lemon zest and garnish with salt.

Next, add arugula, lemon juice, parsley, cheese, olive oil, salt, water and toasted hazelnuts into a food processor. Once done, take ½ inch thick chicken breasts and season with salt and arugula pesto. Broil the chicken on each side for 4 to 5 minutes. Serve the chicken and pasta with remaining pesto and bon appétit!

Smoked Pork Chops with Corn and Okra

This meal will impress your family and it only takes 15 minutes to cook. Begin by sprinkling the pork chops with Cajun seasoning and pepper. Cook to golden brown in a large skillet of vegetable oil. Pro tip: pork chops can be substituted for ham steak! Once cooked, remove pork chops to a plate while you add the onions in and cook until soft. After, add okra and corn until they are crisp and tender. Next, add the tomato, honey, water and some more Cajun seasoning and cook for 2 to 3 minutes or until tomato is soft. Finally, add the chops back into the mixture and cook until tender. Then you’re done! This simple fall recipe is perfect for any occasion.

Apple Tart

This quick apple tart will have your guests thinking you’ve slaved over this dessert all day! Place puffed pastry rectangles onto a baking pan lined with parchment paper or well-sprayed with nonstick spray. Core, halve and slice three whole apples and sprinkle salt, sugar and lemon juice. Stir the apples and let sit. Next, place apple slices on pastries and bake at 425 degrees F for 20 minutes. Serve chopped pecans and caramel sauce on the side!

Pumpkin Cheesecake Pillow Popovers

How can we not give you fall recipes without adding pumpkin?! These pumpkin cheesecake pillow popovers take your average cheesecake and crank it up a notch! To make the popovers, take two mini muffin trays and spray with nonstick spray. In a large bowl, beat sugar and cream cheese, then add an egg, vanilla, cinnamon, nutmeg, allspice, ginger, and of course, pumpkin. Cover the bowl and chill.

Next is the dough. Take cans of crescent rolls and lay out on a floured baking sheet. After creating squares, place them into the muffin cups. Just be sure to place the dough in every other cup so there’s enough room. Spoon the cream cheese and pumpkin mixture into the dough and twist the top of the dough to securely close it. Bake for around 14 minutes, let cool and sprinkle with cinnamon and powdered sugar. It’s great to serve with ice cream!
